Tzatziki
Basic tzatziki proportions are easy to follow. You can add or subtract any of the ingredients to suit you own taste.
Ingredients:
- 1 cup Greek yogurt
- 1 tbsp. lemon juice
- 1 clove crushed garlic
- 1 tbsp. fresh dill
- 1 English cucumber, grated
- Salt and pepper to taste
Instructions:
Mix together well and allow to stand for a few hours to blend flavours.
I recommend using Greek yogurt for your tzatziki because it is thick. If you use regular yogurt, you will need to strain it through cheesecloth – messy and time consuming. Some people also add a tablespoon of mint to their tzatziki.
If you use regular cucumber, you should seed it and draw the water out by sprinkling it with a tablespoon of salt and leaving it sit for 30 minutes before adding to your tzatziki.
